One of my favs this Holiday season! So easy and delicious..

Pecan Balls
Makes: 42 balls

1 cup (2 sticks) light butter
1 tsp. vanilla
1/2 cup powdered sugar
2 1/4 cups flour
1 cup pecans, chopped
1 cup powdered sugar (for rolling)

First, put your pecans in a chopper for about 45 sec or you can chop by hand. In a separate bowl, combine butter and vanilla. Mix in sugar. Then slowly add the flour and pecans to butter mixture. Stir just until incorporated. Dough will be sticky, so refrigerate for 15 min before rolling into balls.

Preheat oven to 350. Roll dough into 1 inch balls and place on cookie sheet about an inch apart. Bake for 15-20 minutes or until golden. Let cool about 3 min and then roll balls in powdered sugar until well coated. Store in airtight container when cooled. These are scrumptious :)

I love cookies with nuts! But these would be my downfall because I don't know when to stop. I'm diabetic, do you think using Sweeta instead would be okay? And also to roll in? I loooove powdered sugar. I wish" they" would make one.

Yeah, I think it would be ok. It may change the flavor a bit....but these are scrumptious so I'm sure they'll still be DELISH!! Let me know how it goes :) Happy baking!
